Mid-Century Menu Monday for April 11 to April 17

Happy Easter! Here are the menus for Holy week. During this week, I finish my spring cleaning (by Wednesday), and then spend Holy Thursday preparing for Easter. On Good Friday, I fast and make a pilgrimage, so those menus also look different than usual. And on Holy Saturday, the children and I finish preparations and decorations for Easter, Holy Week is also the first week of the children’s spring break. So a lot of these meals are quick-and-easy meals for spring cleaning and holiday busyness.

Monday’s Meal Plan

Breakfast

  • Orange-and-grapefruit juice
  • Hot cereal with top milk
  • Poached eggs on toast
  • Coffee for adults, milk for children

Lunch

  • Egg salad sandwiches
  • Apple slices
  • Peanut butter cookies
  • Coffee for adults, milk for children

Dinner

  • English beef stew with dumplings
  • Boiled potatoes
  • Turnip greens
  • Tomato salad
  • Tapioca cream with strawberries
  • Coffee for adults, milk for children

Tuesday’s Meal Plan

Breakfast

  • Stewed prunes
  • Hot cereal with top milk
  • Soft-boiled eggs
  • Toast with butter and marmalade
  • Coffee for adults, milk for children

Lunch

  • Vegetable soup
  • Bread-and-butter
  • Banana pudding
  • Coffee for adults, milk for children

Dinner

  • Salisbury steaks with onion gravy
  • Baked potatoes
  • Buttered asparagus
  • Bread and butter
  • Carrot salad

Wednesday’s Meal Plan

Old-Fashioned Easter Sunday Dinner

  • Roast chicken with orange stuffing
